Brownie Cheesecake Highballs

This recipe is FULL of clean dupes for classic treats - a clean caramel drizzle and a vegan cheesecake filling. Take what you need, or make the whole thing!




  • 4 Apple Spice Blondies
  • ½ cup vegan cream cheese (or not, if vegan's not your thing!)
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups apple (chopped)
  • 1 tbsp melted coconut oil
  • ¼ tsp cinnamon
  • ¼ cup cashew butter
  • ¼ cup maple syrup
  • 2 tbsp almond milk



  • In a food processor, add the blondies and pulse until crumbled.
  • In a bowl, mix together the cream cheese, maple syrup, and vanilla extract until smooth, set aside.
  • Dice your apple, then add it to a pan with the melted coconut oil and cinnamon. Sauté until golden brown and the apples are tender.
  • To make the caramel sauce, whisk together the cashew butter, maple syrup, and almond milk until thick and creamy.
  • In each highball glass, add a layer of cheesecake then blondie crumble. Repeat until the glass is full. Top with the sautéed apples and the caramel sauce. Enjoy!
