Brownie Cheesecake Highballs
This recipe is FULL of clean dupes for classic treats - a clean caramel drizzle and a vegan cheesecake filling. Take what you need, or make the whole thing!
Ingredients
- 4 Apple Spice Blondies
- ½ cup vegan cream cheese (or not, if vegan's not your thing!)
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 2 cups apple (chopped)
- 1 tbsp melted coconut oil
- ¼ tsp cinnamon
- ¼ cup cashew butter
- ¼ cup maple syrup
- 2 tbsp almond milk
Instructions
- In a food processor, add the blondies and pulse until crumbled.
- In a bowl, mix together the cream cheese, maple syrup, and vanilla extract until smooth, set aside.
- Dice your apple, then add it to a pan with the melted coconut oil and cinnamon. Sauté until golden brown and the apples are tender.
- To make the caramel sauce, whisk together the cashew butter, maple syrup, and almond milk until thick and creamy.
- In each highball glass, add a layer of cheesecake then blondie crumble. Repeat until the glass is full. Top with the sautéed apples and the caramel sauce. Enjoy!
